Cauliflower Rice Stir Fry

I’ve recently discovered cauliflower rice, and it’s safe to say I’m obsessed! I made this incredible stir fry recipe on a cold day in quarantine when I wanted something warm and comforting that wasn’t soup!
I feel I can make this recipe literally anytime because honestly, there isn't a strict recipe at all. Besides cauliflower rice, any local or frozen vegetable works perfectly in this recipe! Additionally, this warm bowl should keep you full for a few hours because it is packed with fiber!
Ingredients
1. 1 cup frozen cauliflower rice (you can also make the rice yourself by grinding a whole head of cauliflower in the food processor)
2. 1-2 tbsp soy sauce (can use tamari if you are gluten free)
3. 1 tsp sesame oil (can substitute any oil such as olive oil)
4. 2 tbsp coconut milk
5. Optional: 1-2 tsp psyllium husk powder (this makes the texture like sticky rice, and it adds fiber)
6. Any vegetable you want! Here are some ideas:
b. Broccoli
c. Onion
d. Carrots
e. Artichokes
f. String beans
g. Bell pepper
h. Bok choy
i. Eggplant
j. Zucchini
Directions
1. Chop the preferred vegetables you would like to add to the stir fry.
2. Add the frozen or ground cauliflower rice to a pan with the sesame oil (or different oil), and soy sauce (or tamari). Saute the cauliflower until it is golden brown.
3. Add in your preferred vegetables and cook them until they are warmed through.
