Chocolate Chip Banana (or not) Bread

I feel like everyone has made banana bread at least once in quarantine! I know I have… many times. I made this recipe as a healthy vegan alternative and it is definitely a family favorite!


This recipe is incredible because it’s not only low in carb, but the ingredients provide high protein and fiber as well. Also, it's no problem if you can’t find a banana locally, as you can use another ingredient instead. This recipe is vegan, and gluten and nut-free, too!


Ingredients 

1.¼ cup maple syrup

2. 1 mashed banana (can substitute with ⅓ cup apple sauce)

3. ¼ cup almond butter (can substitute any nut butter)

4. ½ cup almond milk (can substitute any plant-based milk)

5. 2 flax eggs (you can make this by soaking 1 tbsp ground flaxseed with 3 tbsp water and letting it sit for a few minutes, sub regular eggs)

6. Vegan chocolate chips 

7. 1 tsp baking powder

8. 1 tsp cinnamon

9. 1 tsp vanilla extract


Directions:

1. Mix all the ingredients together in a bowl and pour the batter into a loaf pan.

2. Bake at 350 for about 35 minutes.
